I have had several macaroon failures from using the italian method. when i found out about the french method, everything clicked and they turned out smooth and with 'feet'. I can see with your piped out mixture that it has begun to separate, this can sometimes happen by using organic/natural food colouring.

These are actually really good questions. I had never thought about why people are referred to as "crunchy granola" types, but I do hear that term all the time, living in Seattle. Lots of birks here.
