All I got is apples

Delicious and nutritious applesauce

I think the rut is catching. When I read Dana's post last week about being stuck in a cooking/blogging rut, I empathized. It happens to all of us from time to time. And now it seems to be happening to me.

I have not baked in over two weeks. I did have an excuse - my parents were over from Canada and I've been here, there and everywhere - but they left four days ago now. And still, nothing. I don't even have flour in the house. How many years has it been since that last happened?

I've taken to smearing slices of white bread with jam, just to get my sweet fix. Instead of delicious slices of homemade cake, we snack on Penguins after dinner. (Actually, don't knock 'em til you've tried 'em. Those babies are yummy.)

This lazy silliness will stop soon. I will buy flour and sugar, I will roll up my sleeves, I will bake! But for here, for you, for now, is the only thing I have managed to make recently. Applesauce, my way. It may not be baked, but it is good!

Applesauce

Makes about 1 1/2 cups

6 medium apples, peeled, cored and chopped
3/4 cup water
1/2 tsp cinnamon
zest and juice of half a lemon

In a medium saucepan over medium heat, combine the apples, water, cinnamon and lemon zest and juice. Simmer gently for 15 to 20 minutes, until the apples are very tender. Once the mixture has cooled, use a blender, food processor or fork to blend to your desired consistency.

We all get into ruts sometimes. The only reason no-one hears about mine is that they happen with my main course dishes, which I don't write about!;)

LOL I have been making so much apple sauce lately. I've got loads, and I dont know what to do with it. I've been using it as an ingredient in cake baking.

Ah I hate when that happens/: I just get too busy to bake or too lazy. But don't worry, you'll get out of the rut! Thanks for the applesauce recipe. I just bought some apples so I should make it(:

I've taken to eating bucket-loads of stewed cinnamon apples recently. My granmother has a tree full of them and we have a whole box full to eat through. Somtimes its the simple things that taste so good.

oh it's so good to read that this is happening to someone else! I think that all us bloggers worry that we need to 'perform' all the time when really it should be the passion that drives us... do it when you want to because you're happy about doing it, not because you feel forced to do it.... I set myself a couple of little challenges recently and this has helped me blog more frequently... I have my chicken challenge and my sourdough challenge... it stimulates the mind to be creative... give it a try x
