Brown sugar bundt cake

Firstly, what do you think of my new header? Cute, eh? Many thanks to Reani for my whimsical baking Marie Antoinette!

This time last year I had just returned from a wonderful autumnal trip to Vermont, where leaf chasing was high on the agenda. Unfortunately the colours in Ye Olde England aren't quite so vibrant as they are in New England, but they still have their own charm, as I was reminded on a day trip to the beautiful (and oh-so-tourist-packed) Cotswolds last weekend, with Edward and our visiting friends Catherine and Clint.

Inspired by the pretty colours and the fresh nip in the air, I was inspired to bake something that screamed Autumn. This cake is a repeat from earlier in the year, but made a little more fall-like this time around. I swapped in local grated apple (picked in a field on a Sunday walk to Dunchurch) for the pear I used last time, added finely ground walnuts to the flour mixture and topped the whole cake with a brown sugar glaze (simply made by briefly simmering brown sugar and whipping cream until the sugar dissolves). The result is a delicious October creation for crisp days and cold nights.

This cake was super moist coming out of the oven, so much so that it fell apart a bit as I was unmolding it, even after letting it cool in the pan for 15 mins. I recommend cooling for at least 30 mins before trying to unmold.
